New Chameleon Catering Truck rolls out gourmet fare

 catering logo    When paddlers and attendees show up to enjoy Oswego's first Rock the Locks Paddlefest on June 29, they will also be treated to another first for the area – the Chameleon Catering Truck.

     Co-owners and chefs of the unique new business, Brian Girard and George Shattuck have nearly 60 years of diverse culinary experience between them. The two partners have worked together in the past as head chefs and kitchen managers in leading Oswego and Onondaga County establishments.

     Shattuck, the former chef at Nikki's Downtown, said "I have been interested in a rolling gourmet catering business for the past couple of years. When the idea started to come to life, I immediately thought of Brian Girard as a potential partner. At the end of May, I broached the idea and now we are ready to go live."

     Girard, a native of Central New York and the owner and chef at Blue Plate Seafood in Oswego, said he loved the idea right away. "A mobile operation opens doors to many new opportunities," he said. "Food trucks are very popular in other areas of the country but this would be unique; gourmet food brought to your door."

      From there, they said, everything just fell into place. "I'm really looking forward to it and to working with George again," Girard said.
     "The Waymatic trailer is top of the line and well equipped to support the wide variety of food we plan to prepare for our customers. With this trailer, we are able to create an open-air kitchen with awnings on three sides. Customers have an uninhibited view of the mobile kitchen; they can watch us do our thing," Shattuck said.

     The name Chameleon was chosen to represent the ability to adapt to customer menu requests. We are ready to demonstrate our wide range of culinary capabilities, they said.

     "We have a distinct advantage with this sort of platform to work from," Shattuck said. "What makes us different as far as caterers go is that we can bring a little restaurant right to someone's home, office or event. We know we have the right equipment for what we need to do."

     "We cook outside and serve inside, which is unusual," Girard said. "We have it hot, fresh and ready to go without having to transport it." Chameleon Catering will be using fresh locally-grown ingredients and creating homemade dishes from their own exclusive recipes. This is not your average catering fare.

     After Paddlefest, Chameleon Catering will make an appearance in Oswego at the Cidermoon Coffee Birthday Party in the Lot on July 5th. July 7th will find them as a float in the 50th Independence Day celebration in Oswego, and will also serve as their Grand Opening.
